Johns Hopkins has a research program in which they are working on genetically engineering yeast to include essential nutrients so that they are pre-baked into bread. I have some pretty confusing opinions on genetic engineering, but I really like this idea. Yeast aren’t plants, so there will be no dangerous cross pollination. And with some simple tests to make sure the yeast has no adverse effects, this project could soon spread to every day life.
