Johns Hopkins has a research program in which they are working on genetically engineering yeast to include essential nutrients so that they are pre-baked into bread. I have some pretty confusing opinions on genetic engineering, but I really like this idea. Yeast aren’t plants, so there will be no dangerous cross pollination.
